About this Recipe

These mashed potatoes are buttery, delicious, and decadent. The technique is in the immulsion of the butter and constantly whipping it. It is definitely a labor of love your guests will love you for it!

Ingredients

  • 4 medium/large size yukon gold potatoes

  • 2 sticks of butter - cut and chilled

  • 3 tablespoon infused butter (optional)

  • about a 1/4  cup whole milk

  • 1 Tbsp Chef Roilty’s infused olive oil

Recommended Equipment for this Recipe

A potato ricer! Grab one here!

How to Prepare Mashed Potatoes

  1. In a medium pot filled with water - bring potatoes, skin on, to a low boil and hold until you can easily pierce potatoes with a fork or knife.

  2. Remove potatoes from water and let cool.

  3. Once cool to touch , skin each potato with a paring knife.

  4. Using a ricer, rice each potato. If you do not have ricer, simply mashing potatoes is fine.

  5. Add a pinch of salt and slowly heat the potatoes to dry them out a little. Once the potato starts sticking to the pan you can begin adding butter.

  6. Gradually add chilled butter a few tablespoons at a time, mixing vigourously with a wooden spoon. Fully incorporate all the butter, adding a splash of milk anytime you see the butter and potato begin to separate.

  7. Salt to taste.

  8. Once butter is melted into potatoes, use wire whisk vigorously to bring together.

***Optional*** Whisk in final tablespoon of infused butter.

Cooking Tips From Chef Roilty

  • butter should be cold.

  • Use wooden spoon when mixing and whisk to finish.

  • Don’t put all the butter in at once. If the butter begins to seperate add a couple tablespoons of milk and mix well.
