Fudgy, glazed, gooey, rich, chewy – many adjectives describe a fantastic chocolate brownie. No wonder it’s a favorite of many! These dark chocolate brownies ain’t the boxed-up Sara Lee’s from your childhood. They’re above and beyond richer than your fondest memories. Add an infusion and lets take them to the next level!

Don’t let the thought of making brownies intimidate you. They’re easy to prepare, and you can even spruce them up with your choice of pistachios, walnuts, pecans, or almonds.

Ingredients

To prepare the brownies

  • 3 Tbsp. (1 stick) unsalted butter (diced)

  • 3 oz. unsweetened chocolate (chopped)

  • 1 cup sugar

  • 2 tsp. orange zest (grated)

  • ¼ tsp. fine sea salt

  • 2 large eggs (room temperature)

  • ½ cup all-purpose flour

  • ½ cup (2 oz.) of unsalted, chopped nuts (optional, or your favorite topping.)

  • 2 Tbsp. Chef Roilty’s Infused Olive Oil (100mg per tablespoon)

To prepare the glaze & garnish

  • 2 oz. semisweet chocolate, coarsely chopped

  • 3 Tbsp. heavy or whipping cream

  • 1½ Tbsp. finely chopped nuts

How to Prepare Brownies with Chocolate Glaze

The most important thing to preparing an outstanding brownie is to use good quality chocolate. It pretty much decides how your brownies will taste. Use only real chocolate for a more robust chocolate flavor, no substitute!

  1. Arrange a metal rack at the center of your oven and preheat to 350°F.

  2. Lightly butter & flour an 8-inch square baking pan.

  3. Line the pan with a sheet of parchment paper, then butter the bottom & sides of the paper. Dust lightly with flour.

  4. Place the butter and unsweetened chocolate in a double boiler pot, ensuring the water doesn’t reach the pot.

  5. Stir the mixture until it’s melted, smooth, and shiny. Set it aside to cool for 10 minutes.

  6. Stir in the sugar, orange zest, and salt. Add the eggs just 1 at a time, and mix well before adding the next.

  7. Mix in the 2 Tbsp. Chef Roilty’s Infused Olive Oil.

  8. Add flour (and nuts) and stir until well incorporated.

  9. Spread batter in prepared pan and smooth top with a metal spatula or the back of a knife.

  10. Bake for about 20 to 22 minutes. The toothpick should come away with only a few crumbs when you poke your brownies. No crumbs at all may mean that they’re overbaked.

  11. Cool your brownies in the pan. Run a sharp knife around the inner sides of the pan to loosen the brownies and lift using the parchment paper to pull up. Cut into 16 small pieces, or larger if preferred.

Chocolate glaze on top of anything is rich, decadent, and oh so easy! Smooth and creamy – it’s the perfect topping for your brownies.

To prepare the glaze

  1. Place the semisweet chocolate and cream in a heat-proof bowl set over but not touching a saucepan of simmering water.

  2. Stir constantly until the chocolate has melted and the mixture is smooth and warm.

  3. Transfer the warm chocolate into your squeeze bottle and drizzle in a zigzag pattern over the top of the brownies, or use a teaspoon.

  4. Sprinkle the top of the brownies with your choice of crushed nuts.

  5. Refrigerate until the glaze is set for 1 hour or more, up to a few days.

Cooking Tips From Chef Roilty

  • For the wow factor, serve with a scoop of vanilla ice cream!

  • Brownies can be prepared 3 days ahead and stored in the fridge in an airtight container. Bring to room temperature before serving.

  • Cut the parchment paper a little longer, covering the pan's bottom and sides. It will make it easier to remove the brownies from the pan!

  • If you want stronger brownies, double down on the infusion!

  • You can add whatever toppings and/or add ins you like. Try some oreos or your favorite nuts!
