About this Recipe

Here's a recipe for the best infused meatballs in the world. This recipe will make eighteen tasty 1-inch meatballs. The combination of pork, beef and veal really take these to another level. Using fresh bread crumbs and freshly grated cheese in this recipe will make a huge difference. Serve them smothered in cheese and sauce, with spaghetti, on a pizza, or a sub sandwich for a meatball you and your guests will never forget!

Ingredients

  • 1.5 cup finely chopped fresh Italian parsley

  • 2 cups stale bread (chopped)

  • 1/4 cup whole milk

  • ½ lb. ground beef

  • ½ lb. of ground veal

  • ½ lb. ground pork

  • 2 tsp. kosher salt

  • 2 tsp. freshly ground black pepper

  • 2 tsp. granulated garlic

  • 1 extra large egg

  • ½ cup grated Parmigiano Reggiano

  • 1 Tbsp. Chef Roilty’s infused olive oil (100mg THC per Tbsp.)

  • ½ cup unseasoned bread crumbs

  • 3 cups of vegetable oil

How to Prepare Roilty’s Meatballs

Prepping the meatballs:

  1. Finely chop the parsley and set aside to dry for 30 minutes.

  2. Slice your bread into ½ inch pieces, add about 1/4 cup milk, and mash with your hands for a few minutes; until it’s smooth and the milk is fully incorporated. The mixture will have a firm but doughy texture.

  3. Add beef, veal, pork, salt, pepper, and granulated garlic to the mixture; knead well until all ingredients are thoroughly mixed.

  4. Add the egg, grated Parmigiano Reggiano, parsley and our THC infused olive oil. Continue kneading until all ingredients are well combined.

  5. Add bread crumbs and knead well once again.

  6. Divide the mixture into balls of ~4 ounces, then roll them with your hands using a circular motion, until they’re round and firm.

Cooking the meatballs:

  1. In a frying pan, heat oil to ~325°F.

  2. Place the meatballs in the pan and cook in batches.

  3. When the meatballs turn light brown on one side, flip them over and brown the other side.

  4. Once internal temperature has reached 150°F, they’re ready to eat!

Cooking Tips From Chef Roilty

  • Slowly mix the ingredients together as you prepare the meatballs, and in the order of the recipe. Make sure they are well incorporated with each step. This is crucial to get the proper final product.

  • You can use any mixture of meat, have fun with it! If you can’t find veal substitute something else.

  • Do not drop your meatballs into the hot oil or you’ll risk splashing hot oil everywhere. Ease them into the pan and flip them over gently.

  • You can eat the meatballs right out of the pan, or simmer them in a sauce of your choice for 30 minutes before serving. Goes perfect with a side salad!
