Instructions for Pan Seared Zucchini
Simple and delicious, make an elegant dish in under 45 minutes tonight!
Halve the 3 large zucchini or summer squash lengthwise and score the cut side in a crosshatch pattern so that salt can penetrate it.
Sprinkle 1 tablespoon of sea salt evenly over the cut and scored side of the zucchini. Allow the zucchini to sit for 15 minutes to draw out moisture.
Preheat the oven to 400°F (degrees Fahrenheit). Pat the zucchini dry with paper towels.
Heat just enough oil to coat the bottom of a cast iron skillet or oven-safe frying pan over medium-high heat until shimmering but not smoking. Place the zucchini halves, cut side down, in the hot oil and adjust the heat to allow them to sear and brown without burning. Cook for about 5 minutes, checking occasionally, until browned but not burnt.
Transfer the skillet with the zucchini to the preheated oven and roast the zucchini for 20-30 minutes or until they are soft. Larger zucchini may take a few minutes longer.
Once finished roasting, remove the zucchini from the oven and cut each Zucchini down the middle, diagonally, Garnish the roasted zucchini with lemon zest, balsamic glaze, and chopped pecans before serving.
For the infusion we use a drizzle method just adding the infused oil right on top of the dish. This gives you the freedom to dose some plates more than others as well. Enjoy!
Cooking Tips From Chef Roilty
Remove Excess Moisture: It's crucial to sprinkle the zucchini with salt and let it sit for 15 minutes to draw out excess moisture. Pat the zucchini dry with paper towels before cooking to ensure a crispy exterior and prevent the dish from becoming watery.
Even Searing: When searing the zucchini in the skillet, make sure to adjust the heat to prevent burning while achieving a golden-brown crust. Cooking the zucchini cut-side down allows for even browning and enhances the flavor.
Garnish Thoughtfully: Enhance the dish's presentation and flavor by garnishing with fresh lemon zest, a drizzle of balsamic glaze, and chopped pecans just before serving. These additions not only add visual appeal but also elevate the overall taste of the dish.
Choose the Right Oil: Use a neutral cooking oil with a high smoke point, such as grapeseed or avocado oil, for searing the zucchini. This ensures that the oil won't burn at high temperatures, allowing for a perfectly seared exterior without imparting any unwanted flavors.
Monitor Oven Roasting: Keep an eye on the zucchini while it's roasting in the oven to prevent overcooking. Depending on the size of the zucchini, the roasting time may vary, so check for doneness after 20 minutes and adjust accordingly.
